Pumpkin Bread (Makes 6 small loaves, or 2 large loaves)
3 cups granulated sugar
3 1/2 cups all-purpose flour
2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
1 cup vegetable oil
2 cups canned pumpkin
2/3 cups water
Mix dry ingredients together in a large bowl.
Add wet ingredients and mix with mixer for 1 1/2 minutes.
Pour into loaf pans sprayed with non-stick cooking spray
Bake for 60 minutes at 300 degrees F. It may take longer for larger loaves. Check for doneness by inserting a toothpick into the center.
Let cool for 15 minutes before carefully removing from the loaf pans and allow to cool completely.
